This version stays true to the soft, classic Victoria sponge cake while bringing a fresher, lighter touch to the filling. It’s made with a delicate homemade strawberry compote, lightly sweetened and prepared with fresh strawberries. Instead of the usual buttercream, I chose to pair it with a light and silky vanilla whipped cream. The freshness of the strawberries and the softness of the cream come together beautifully, creating a simple yet perfectly balanced bite.
